Hawaiian BBQ Chicken Sliders

This recipe came together quickly and was so delicious. Juicy chicken, spicy BBQ sauce, and sweet Hawaiian rolls. It's a winner, great for appetizers or a main dish. My husband and I ate these for dinner with potato salad on the side. They would also be phenomenal with macaroni salad. 



Hawaiian BBQ Chicken Sliders
     serves 6
  • 1 package King's Hawaiian sweet rolls
  • 12 ounces Chicken Breast
  • 1 large Green Bell Pepper
  • 1/4 medium White Onion
  • 1/4 cup Sweet and Spicy BBQ Sauce (I used Sweet Baby Ray's)
  • 5 slices Provolone Cheese
  • 2 tsp Extra Virgin Olive Oil
  • 1 Tbsp melted unsalted Butter
To start prep your ingredients. I cut the chicken into chunks, and cut the bell peppers and onions into thin strips. Over medium heat add the olive oil, peppers, and onions. Saute for 5 minutes until the vegetables begin to soften. Add the chicken and cook over medium heat for 10 minutes or until the chicken is cooked through. During the last couple minutes of cooking add in the BBQ sauce. While the chicken cooks preheat your oven to 375 degrees Fahrenheit. Cut the Hawaiian rolls in half, and place the bottom portion on a foil lined baking sheet.

If you want spread a very thin layer of BBQ sauce over the bread. Top the bottom portion of bread with as much of the pepper, onion, and chicken mixture as you can. Lay the cheese on top being sure to cover all of the filling, then top with the top portion of the rolls. Using a pastry brush top the rolls with a light coating of butter. Bake for 10 minutes or until the cheese is melted and the tops of the rolls are golden brown. If you want an extra kick of spice, drizzle sriracha or hot sauce over the filling before you add the cheese. Slice up and enjoy!



Per serving: 380 calories, 18 grams fat, 31 grams carbs, 12 grams sugar, and 23 grams protein.
